Corn & Garbanzo Bean Salad


Ingredients:

  • 1 can whole corn, rinsed and drained

  • 1 can garbanzo beans, rinsed and drained

  • 1/2 cup diced roasted red bell peppers

  • 1/2 cup diced fresh mozzarella

  • 1 large handful fresh cilantro, chopped

  • 1 large handful flat-leaf parsley, chopped

  • 1 small shallot, finely diced

  • 3 tbsp white balsamic vinegar (or lemon juice)

  • 4 tbsp olive oil

  • 1 tsp salt

  • 1/2 tsp black pepper


Instructions:

  1. To make the dressing, whisk together vinegar, oil, salt and pepper. Set aside.

  2. Combine everything else together in a large bowl, then add the dressing and mix to combine. Season to taste with additional salt and pepper.

  3. Cover and place in the fridge for 30-40 min so all the flavors can come together.
