Corn & Garbanzo Bean Salad
Ingredients:
- 1 can whole corn, rinsed and drained 
- 1 can garbanzo beans, rinsed and drained 
- 1/2 cup diced roasted red bell peppers 
- 1/2 cup diced fresh mozzarella 
- 1 large handful fresh cilantro, chopped 
- 1 large handful flat-leaf parsley, chopped 
- 1 small shallot, finely diced 
- 3 tbsp white balsamic vinegar (or lemon juice) 
- 4 tbsp olive oil 
- 1 tsp salt 
- 1/2 tsp black pepper 
Instructions:
- To make the dressing, whisk together vinegar, oil, salt and pepper. Set aside. 
- Combine everything else together in a large bowl, then add the dressing and mix to combine. Season to taste with additional salt and pepper. 
- Cover and place in the fridge for 30-40 min so all the flavors can come together.
