Biryani Fried Rice


Ingredients:

  • 3 tbsp olive oil

  • 1 small onion, thinly sliced

  • 1 tomato, diced

  • 1 tbsp minced ginger

  • 1 tbsp minced garlic

  • 3 tbsp water

  • 3 tbsp biryani masala

  • 1/2 tsp salt

  • 1/2 tsp red chili powder

  • 2 chicken breasts, cut in bite-sized pieces

  • 1 serrano chili

  • lemon slices

  • 1/2 cup sliced green onions

  • 3 cups cooked rice

  • 3 eggs, beaten


Instructions:

  1. In a large wok or skillet, heat olive oil on medium high heat.

  2. Add onions and fry until golden brown. Then remove half the onions and set aside.

  3. To the pan, add diced tomatoes, water, ginger, and garlic. Cook for 1-2 minutes until the tomatoes soften slightly.

  4. Add biryani masala, salt, and red chili powder. Cook for 1 minute.

  5. Add the chicken and cook for 4-5 minutes until cooked through.

  6. Once the chicken is cooked, add the serrano chilies and half the green onions. Cook for another minute.

  7. Add the cooked rice and lemon slices and mix together until all the rice is fully coated.

  8. Make a well in the center of the pan. Add a tablespoon of olive oil and the beaten eggs. Cook the egg until its scrambled, then incorporate with the rest of the rice.

  9. Cook the rice on high heat for another 1-2 minutes. Then remove from the heat and add the reserved fried onions and the rest of the green scallions. Mix everything together and serve.
