Biryani Fried Rice
Ingredients:
- 3 tbsp olive oil 
- 1 small onion, thinly sliced 
- 1 tomato, diced 
- 1 tbsp minced ginger 
- 1 tbsp minced garlic 
- 3 tbsp water 
- 3 tbsp biryani masala 
- 1/2 tsp salt 
- 1/2 tsp red chili powder 
- 2 chicken breasts, cut in bite-sized pieces 
- 1 serrano chili 
- lemon slices 
- 1/2 cup sliced green onions 
- 3 cups cooked rice 
- 3 eggs, beaten 
Instructions:
- In a large wok or skillet, heat olive oil on medium high heat. 
- Add onions and fry until golden brown. Then remove half the onions and set aside. 
- To the pan, add diced tomatoes, water, ginger, and garlic. Cook for 1-2 minutes until the tomatoes soften slightly. 
- Add biryani masala, salt, and red chili powder. Cook for 1 minute. 
- Add the chicken and cook for 4-5 minutes until cooked through. 
- Once the chicken is cooked, add the serrano chilies and half the green onions. Cook for another minute. 
- Add the cooked rice and lemon slices and mix together until all the rice is fully coated. 
- Make a well in the center of the pan. Add a tablespoon of olive oil and the beaten eggs. Cook the egg until its scrambled, then incorporate with the rest of the rice. 
- Cook the rice on high heat for another 1-2 minutes. Then remove from the heat and add the reserved fried onions and the rest of the green scallions. Mix everything together and serve.
