Bolognese
Ingredients:
- 1 onion, finely diced 
- 1 tbsp minced garlic 
- 1 tsp salt 
- 1 tsp oregano 
- 1 tsp crushed red chillies 
- ½ tsp fennel seeds 
- 1 lb ground chicken 
- 1 jar of tomato sauce (preferably Rao’s homemade marinara) 
- 1 pack of bucatini pasta 
- 2 tbsp heavy cream 
- ½ cup grated parmesan cheese 
- olive oil 
Instructions:
- Add a few tablespoons of oil to a pan. 
- Cook the onions for a few minutes until they soften. 
- Then add the minced garlic, salt, oregano, crushed red chilies, and fennel seeds, and cook for a minute. 
- Cook the spices for a minute, and then add the ground chicken. 
- Saute the chicken until it’s fully cooked and browned. 
- Add the jar of tomato sauce, and stir in the sauce while scraping the sides and bottom of the pan. 
- Lower the heat, cover the pan, and cook the sauce for at least 15-30 minutes. 
- While the sauce is cooking, boil the pasta by following the instructions on the packaging. Retain a cup of pasta water. 
- To finish the sauce, add cream, and parmesan cheese to the sauce. 
- Add the cooked and drained pasta plus a cup of pasta water to the sauce. 
- Toss the pasta in the sauce until it thickens and coats each piece. 
- Finish by sprinkling with grated parmesan.
