Chapli Kebab Sliders


Ingredients:

Chapli Kebab

  • 1 lb ground beef

  • 1/2 large red onion, finely diced

  • 1/2 roma tomato, finely diced (seeds removed)

  • 2 serrano chilies, finely diced

  • 1/4 cup fresh chopped cilantro

  • 1 tsp salt

  • 1 tsp red chili flakes

  • 2 heaping tsp lightly ground whole coriander

  • 1 tomato, sliced whole

  • oil, for frying

Yogurt Raita

  • 1/2 cup plain yogurt

  • 1/4 cup finely diced cucumber (seeds removed)

  • 1/4 cup fresh chopped cilantro

  • 1 tbsp lemon juice

  • 1/2 tsp salt

  • 1/4 tsp red chili powder

  • 1/4 tsp cumin

To Assemble

  • grilled onions

  • butter lettuce

  • brioche slider buns


Instructions:

  1. Combine all of the ingredients for the chapli kebabs in a bowl and mix well. Let sit for ten minutes. Divide the meat equally in 10 parts and form into flat patties. (The kebabs shrink as they cook, so make them larger than the buns. Press a slice of tomato into one side of the patty.

  2. Fry the kebabs in oil for 1-2 minutes on each side (tomato side first), or until crispy. Remove from the pan and let drain on a paper towel. Make sure you don’t crowd the pan otherwise the meat will not get crispy.

  3. In a small bowl, combine the ingredients for the raita and set aside.

  4. Grill sliced onions in a small skillet on medium heat until brown on both sides. Toast brioche buns in the skillet once the onions are removed.

  5. Assemble the burgers by slathering a generous amount of the raita on your toasted brioche buns. Top with a chapli kebab (tomato side up), grilled onions, and butter lettuce.
