Chicken Salad Sandwiches
Ingredients:
- ½ cup mayo 
- 3 tbsp red wine vinegar 
- 1 tbsp zaatar 
- ½ tsp salt 
- ½ black pepper 
- 2-3 tbsp olive oil 
- 1 large handful chopped fresh cilantro 
- 1 whole bunch green onions, thinly sliced 
- 3 cups cooked diced chicken 
- mini croissants 
- microgreens 
 
Instructions:
- In a mixing bowl add mayo, red wine vinegar, zaatar, salt, pepper, cilantro, green onions and olive oil. Mix to combine. 
- Fold in the cubed chicken. 
- Make a lengthwise cut on top of the croissant, and then stuff the top with a few spoonfuls of the chicken. 
- Top with some microgreens and serve.
