Chicken Wings
Ingredients:
Wings
- ½ tsp baking soda 
- 2 tsp salt 
- 1 tsp black pepper 
- ½ tsp garlic powder 
- 2 lbs chicken wings 
Cilantro Jalapeno sauce:
- ½ jalapeno diced 
- ¼ cup chopped cilantro 
- 2 tbsp shallot 
- 2 cloves garlic 
- 1 tsp salt 
- ½ tsp black pepper 
- 2 tbsp red wine vinegar 
- 4 tbsp olive oil 
Honey Sriracha sauce
- 2 tbsp sriracha 
- 3 tbsp honey 
- 1 tsp vinegar 
- ½ tsp salt 
- 2 tbsp soy sauce 
- 1 tsp sesame oil 
Instructions:
- Preheat the oven to 250 degrees. 
- Mix together baking soda, salt, garlic powder and black pepper and add the wings into the spice mix. 
- Line a baking sheet with foil or parchment paper and place a wire rack on top. Place the wings on top with the skin the side up, leaving space between the wings. Do not crowd the pan. 
- Place the wings in the oven for 25 minutes. 
- After 25 minutes, increase the oven temp to 500 degrees and cook for another 25 minutes, flipping the wings halfway through. 
- For the cilantro jalapeno sauce, mix together all ingredients in a large mixing bowl and let sit while the wings bake. 
- To prepare the honey sriracha sauce, mix together all ingredients in a large mixing bowl and let sit while the wings bake. 
- Remove the wings from the oven and place half the wings in the cilantro jalapeno sauce and half the wings in the honey sriracha sauce.
