Chili


Ingredients:

  • 1 onion, diced

  • 2-3 green chilies, sliced

  • 2 tbsp minced garlic

  • 2 lbs ground chicken (beef or turkey are some other alternatives)

  • 2 tbsp tomato paste

  • 2 packets of chili seasoning

  • 1 (28 oz) can of peeled tomatoes

  • ½ cup water

  • 1 can of kidney beans

  • shredded cheese

  • sour cream

  • fresh cilantro

  • olive oil






Instructions:

  1. In a large pan, add a few tablespoons of oil, and saute the diced onion and sliced green chilies.

  2. When the onions have softened a bit, add the minced garlic and cook for a minute or two.

  3. Then add the ground chicken, and let it cook.

  4. Once the meat has cooked through, add tomato paste and the chili seasoning. 

  5. Cook the spices and tomato paste for a few minutes, and then add the can of peeled tomatoes and water.

  6. Lastly, add a can of drained and rinsed kidney beans.

  7. Lower the heat to a simmer and cover the pot. Let the chili cook for as long as you can - at least an hour.

  8. Serve with shredded cheese, sour cream, some fresh cilantro, and your favorite side.
