Mango Tart Bars


Ingredients:

  • ¾ cup cold water

  • 2 tbsp gelatin powder

  • ½ cup heavy whipping cream

  • ½ cup granulated sugar

  • ¼ cup cream cheese

  • 1 (30oz) can mango puree 

  • 4 mini packs Parle-G biscuit (or any other biscuits)

  • 5 tbsp melted butter 

  • ¼ tsp ground cardamom


     


Instructions:

  1. In a small bowl, add the cold water and gelatin. Let it rest for 10 minutes.

  2. In a mixing bowl, add the cream and sugar, and whip until the cream has thickened, and set aside.

  3. In another mixing bowl, add the cream cheese and whip until it’s smooth.

  4. Then add the mango puree a little at a time, and mix well between each addition to make sure there are no lumps.

  5. Now place the gelatin in the microwave for 10 second intervals until it has completely melted.

  6. Let the gelatin cool slightly, and then add to the mango mixture. Then add the whipped cream, and fold it gently into the mixture.

  7. Add the Parle-G biscuits into a food processor. There should be around 2 cups worth of crumbs when you are done.

  8. To the crumbs, add butter and cardamom and mix until the consistency is of wet sand.

  9. Line a dish of your choice with plastic wrap. A square baking pan would work the best.

  10. Add the crumbs to the dish, and press them evenly into the bottom of your dish.

  11. Pour the mango mixture over the crumbs, and refrigerate for 3-4 hours until it sets.

  12. Once it has set, lift the plastic wraps and the mango tart should easily come out from the dish.

  13. Cut it into bars, and top with anything you like. Whipped cream, berries, and mango slices are some options.
