Masala Fried Rice
Ingredients:
- ½ tsp cumin 
- 1 red onion, finely diced 
- 1 carrot, finely diced 
- 1 bell pepper, finely diced 
- 1 tbsp tomato paste 
- ½ tsp salt 
- ½ tsp red chili powder 
- ½ tsp turmeric 
- ½ tsp coriander 
- soy sauce 
- 3 tbsp water 
- 2 cups cooked rice 
- 2 beaten eggs 
- green onions, thinly sliced 
- oil, for frying 
 
Instructions:
- Add a few tablespoons of oil to a pan, and add the cumin and let it bloom for a few seconds in the oil. 
- Then add your diced vegetables and sauté until they have softened. 
- Add tomato paste, salt, red chili powder, turmeric, and coriander to the pan, and let it cook for a couple of minutes. 
- Add a few dashes of soy sauce, water, and rice. 
- Sauté the rice with the vegetables until the rice is warmed through. 
- Create some space in the center of your pan, add another tablespoon of oil, and gently add 2 beaten eggs. 
- Gently cook the scrambled eggs, and then mix in with rest of the rice. 
- Finish with some thinly sliced green onions.
