Mediterranean Pasta Salad


Ingredients:

  • 1 orange bell pepper

  • 1 red bell pepper

  • 1 red onion

  • salt, to taste

  • pepper, to taste

  • 1 box of fusilli pasta

  • sliced cherry tomatoes

  • sliced cucumbers 

  • sliced pepperoncini peppers

  • chopped cilantro

  • cubed feta

Dressing:

  • 4 tbsp olive oil

  • 2 tbsp red wine vinegar 

  • ½ tsp dijon mustard

  • ½ tsp salt

  • ½ tsp black pepper

  • 1 tsp dried oregano



     


Instructions:

  1. Start by cutting the bell peppers and onion into large squares, and add them to a mixing bowl.

  2. Then drizzle with some olive oil, and season with salt and pepper.

  3. Toss so everything is coated evenly.

  4. Place the vegetables in a single layer in an air fryer at 400 degrees for about 7-8 minutes until they are roasted abd slightly charred. Alternatively, you can place them on a cookie sheet and bake in the oven at 450 degrees.

  5. Then cook a box of fusilli pasta according to the instructions on the packaging.

  6. For the dressing, combine all the ingredients in a large mixing bowl and whisk together.

  7. In the bowl with the dressing, add the cooked pasta, roasted vegetables, cherry tomatoes, cucumbers, pepperoncini peppers, cilantro, and cubed feta.

  8. Toss, and serve.
