Spicy Ricotta Gnocchi


Ingredients:

  • 1 cup flour

  • 1 egg

  • ¾ cup fresh ricotta 

  • A pinch of salt

  • 3-4 tbsp olive oil

  • 1 finely diced shallot

  • 2 thinly sliced garlic cloves 

  • 2 tbsp tomato paste 

  • ½ cup cream

  • ¼ cup water

  • ½ tsp salt

  • ½ tsp oregano

  • 1 tsp crushed red pepper

  • shredded parmesan

  • burrata


Instructions:

  1. Start by placing 1 cup of flour on a cutting board, then crack an egg into the center with ricotta and some salt,

  2. Use a fork to slowly start combining the ingredients in the center, while slowly incorporating the flour on the sides. 

  3. Once the mixture starts combining together, use your hands to knead and mix together the flour. Sprinkle more flour in if needed, using as little as possible.

  4. Split the dough into four equal parts. 

  5. Roll each quarter into a long log and then cut into 1 inch pieces.

  6. Use the back of a fork to make an indentation in each piece. 

  7. Set the gnocchi aside and in a pan add olive oil with the shallots on medium/low heat.

  8. Once the shallots have softened add the garlic. Cook for another minute and then add the tomato paste and cook for 2-3 minutes until the color turns darker. 

  9. Add the cream and water with salt, oregano and red chili flakes.

  10. Drop the gnocchi into a pot of boiling water. They will immediately sink to the bottom of the pot.

  11. As soon as the gnocchi floats to the top, strain the gnocchi and drop into the sauce .

  12. Spoon the gnocchi into a dish and top with shredded parmesan and a ball of burrata.
