Three Pepper Chicken


Ingredients:

  • 1 lb boneless, skinless chicken thighs cut in 1-2in pieces

  • 2 tbsp minced garlic

  • 2 tbsp yogurt

  • 1/2 tsp salt

  • 1/2 tsp cracked black pepper

  • 1/2 tsp crushed red chili flakes

  • 2 serrano chilies, sliced

  • olive oil


Instructions:

  1. Add 2-3 tbsp of olive oil to a skillet on medium-high heat.

  2. Once the oil is hot, add the chicken and let it cook on one side for 1-2 minutes until golden brown on one side. Then flip the chicken and continue sauteing until the chicken is no longer pink, about 4-5 minutes.

  3. Add minced garlic to the pan and cook for 1 minute. Then add the yogurt and continue cooking the chicken for 3-4 minutes until the chicken starts stick to the bottom of the pan and the yogurt is cooked out.

  4. Add the salt, black pepper, red chili flakes, and sliced serrano chilies. Cook for another 2 minutes until the serrano chilies soften, then serve with rice or naan.
