Peach & Almond Tarts
Ingredients:
- 2 ripe peaches, sliced thinly 
- 1/2 tsp ground cinnamon 
- 1/4 cup butter 
- 1/4 cup + 1 tbsp granulated sugar 
- 1/4 cup almond flour/ground almonds 
- 1 egg 
- Puff pastry sheet 
- Sliced almonds, for garnish 
- Powdered sugar, for garnish 
Instructions:
- Mix together sliced peaches, 1 tbsp sugar, and cinnamon in a bowl and set aside. 
- In a small mixing bowl, cream together butter and remaining sugar for 1 minute. Add almond flour until mixed in, then add the egg and mix until well combined. 
- Cut puff pastry into squares and lay a few inches apart on a baking sheet lined with parchment paper. 
- Add about a tbsp of the almond mixture in the center of each square. (Adding too much of the filling will cause it to spread all over the pan, so only use a small amount). 
- Top with the sliced peaches and bake at 400 degrees for about 15-20 minutes or until the pastry has puffed up and is golden brown. If the almond mixture has spread out too much, just trim off the edges from each tart. 
- Top the tarts with sliced almonds and powdered sugar and serve warm or at room temperature.
