Peach & Almond Tarts


Ingredients:

  • 2 ripe peaches, sliced thinly

  • 1/2 tsp ground cinnamon

  • 1/4 cup butter

  • 1/4 cup + 1 tbsp granulated sugar

  • 1/4 cup almond flour/ground almonds

  • 1 egg

  • Puff pastry sheet

  • Sliced almonds, for garnish

  • Powdered sugar, for garnish


Instructions:

  1. Mix together sliced peaches, 1 tbsp sugar, and cinnamon in a bowl and set aside.

  2. In a small mixing bowl, cream together butter and remaining sugar for 1 minute. Add almond flour until mixed in, then add the egg and mix until well combined.

  3. Cut puff pastry into squares and lay a few inches apart on a baking sheet lined with parchment paper.

  4. Add about a tbsp of the almond mixture in the center of each square. (Adding too much of the filling will cause it to spread all over the pan, so only use a small amount).

  5. Top with the sliced peaches and bake at 400 degrees for about 15-20 minutes or until the pastry has puffed up and is golden brown. If the almond mixture has spread out too much, just trim off the edges from each tart.

  6. Top the tarts with sliced almonds and powdered sugar and serve warm or at room temperature.
