Cheesecake Baklava


Ingredients:

Baklava

  • ¼ cup finely diced walnuts

  • ¼ cup finely diced pistachios

  • ½ tsp ground cinnamon

  • 8 oz cream cheese

  • ½ cup granulated sugar

  • 1 tbsp vanilla

  • 1 egg

  • phyllo dough

  • ¼ cup butter

Sugar syrup

  • 1 cup of water

  • ½ cup sugar

  • 1 tbsp honey


Instructions:

  1. Preheat the oven to 350 degrees.

  2. Finely dice the walnuts and pistachios. Mix them both together with ground cinnamon and set aside.

  3. In a mixing bowl, add the cream cheese, sugar and vanilla. Mix together until combined.

  4. Add an egg to the cream cheese, mix again until smooth and set aside.

  5. Bring the phyllo dough to room temperature and lay down one sheet.

  6. Pipe the cream cheese filling in a log on top of the dough. The log should be the same length as the dish you intend to bake in. Then add about 1 tablespoon of the nut mixture beside the log shape.

  7. Wrap the filling gently like an egg roll. Repeat for all phyllo sheets.

  8. Generously coat your baking dish with butter and then lay your rolls side by side in the pan.

  9. Brush the remaining butter all over the rolls, making sure to get all the sides and edges.

  10. Place your dishes in the oven for 20-30 minutes until the rolls are golden brown.

  11. While the rolls are baking, prepare your sugar syrup by adding the water to a saucepan with sugar and honey. Bring this to a simmer and let it cook for 10 minutes.

  12. Remove the rolls from the oven when golden brown. While they are still warm, pour the sugar syrup over them.

  13. Add rose petals and chopped pistachios to garnish.
