Cucumber Shrimp Sushi Boats
Ingredients:
- a few mini cucumbers 
- 2 tbsp olive oil 
- ½ tsp salt 
- ½ tsp paprika 
- ½ tsp garlic powder 
- ½ to 1 cup of boiled rice 
- soy sauce 
- 2 tbsp mayo 
- 2 tbsp sriracha 
- 1 tsp honey 
- sesame seeds, for garnishing 
- oil, for frying 
 
Instructions:
- Slice the mini cucumbers in half. 
- Use a small spoon to remove the seeds. 
- In a bowl, combine raw peeled shrimp and olive oil. 
- Then add salt, paprika, and garlic powder to the bowl, and toss to make sure the shrimp is evenly coated. 
- Add some olive oil to a frying pan. When it gets hot, add the shrimp, and make sure to flip it so both sides are evenly cooked. 
- Add a few dashes of soy sauce to the boiled rice, mix together, and set it aside. 
- To make the sauce, add sriracha, mayo, and honey to a bowl, and mix well. 
- To assemble, add some rice to each cucumber boat, and top with your shrimp (around 3-4 pieces of shrimp on one cucumber boat). 
- Then drizzle your sauce on top, and finish with sesame seeds.
