Halal Guys Chicken & Rice


Ingredients:

Marinade:

  • 3 tbsp olive oil

  • 1 ½ tsp salt

  • 1 tsp smoked paprika

  • 1 tsp cumin 

  • 1 tsp oregano 

  • 1 tsp garlic powder

  • ½ tsp turmeric

  • ½ tsp black pepper

  • 2 tbsp lemon juice

  • 1 tbsp yogurt

  • 2-3 boneless & skinless chicken breast or thighs

Rice:

  • 2 tbsp of olive oil 

  • 2 tbsp butter

  • ½ onion, finely diced

  • 1 tsp salt

  • 1 tsp garlic powder

  • 1 tsp chicken bouillon

  • 1 tsp smoked paprika

  • ½ tsp turmeric 

  • 4 cups water

  • 2 cups washed and drained basmati rice

Sauce:

  • 2 tbsp mayo

  • 2 tbsp yogurt

  • 1 tsp minced garlic

  • 1 tbsp lemon juice

  • ½ tsp salt

  • ½ tsp black pepper

  • 2 tbsp water


  • shredded lettuce

  • tomatoes, cut in quarters

  • pita, to serve on side 


     


Instructions:

  1. Start off by making the marinade for the chicken: add all the ingredients for the marinade in a large bowl, and mix well. Let the chicken marinate for as long as you can.

  2. For the rice, add 2 tablespoons of olive oil and 2 tablespoons of butter to a large pot.

  3. Add the diced onion, and let it cook until it is translucent. 

  4. Add the spices for the rice, and let the spices cook for a minute.

  5. Then add the water and the drained rice, and bring to a boil.

  6. Once the rice starts dancing at the stop of the pot, cover with a lid and reduce the heat to low.

  7. Let the rice cook on low (without lifting the lid) for 15 minutes.

  8. Then fluff the rice with a spatula, and set it aside.

  9. Place the marinated chicken on a baking tray lined with foil (do not use parchment or wax paper for this). Make sure the chicken is far apart so it gets crispy instead of getting steamy while it’s cooking.

  10. Turn your oven on broil and place the baking sheet on the highest rack possible. 

  11. Cook the chicken for 5 to 7 minutes on one side (until it’s crispy around the edges), then flip and cook for another 5 to 7 minutes on the other side.

  12. Once the chicken is done, take it out of the oven and let it cool down slightly.

  13. When the chicken has cooled down slightly, dice it and set it aside.

  14. To make the sauce, combine the mayo, yogurt, minced garlic, lemon juice, salt, black pepper, and water. Whisk until smooth.

  15. To assemble: add some rice to your bowl, then add diced chicken, lettuce, tomatoes, sauce, and sriracha.

  16. Serve with pita on the side.
