Lemon Tarts


Ingredients:

Tarts

  • ⅓ cup butter

  • ⅓ cup sugar

  • 1 egg yolk

  • ¾ cup all purpose flour

Lemon Curd

  • 1 stick unsalted butter

  • 6 egg yolks

  • ½ cup sugar

  • 1 tbsp lemon

  • 1 tsp yellow food coloring (optional)

  • ¼ cup jam 


Instructions:

  1. Preheat the oven at 350 degrees.

  2. To prepare the tarts, mix butter and sugar until they are creamed together well.

  3. Add the egg yolk and mix for another minute.

  4. Add the flour and mix.

  5. Generously spray mini tart molds with oil and then add about 1 tbsp of dough mixture to each one. Using your fingers gently press the dough that it spreads to all sides.

  6. Take a fork and prick the bottom of all the molds.

  7. Bake the tarts for 15-18 minutes until the tarts are golden brown around the edges.

  8. Let them cool completely, then use a sharp knife to wiggle them out of the mold.

  9. For the filling, add the butter, egg yolks, sugar and lemon juice to a pan. On low heat, use a whisk to mix everything together. 

  10. To get a bright yellow color add food coloring.

  11. Continue cooking on low heat for about 5-10 minutes until the curd thickens and you are able to push the filling to one side of the pan. 

  12. To make sure the filling is smooth, press it through a mesh sieve while it is still warm. Leave in the refrigerator and cool completely.

  13. When both the tart and the curd have cooled completely, use a piping bag to pipe the curd into the tarts.

  14. To finish, pipe a dot of jam in the center of each lemon tart.
