Kebabs in a Blanket


Ingredients:

  • 1 lb. ground meet (chicken, beef, etc.)

  • 1/2 small white onion, finely diced

  • 1/2 cup fresh chopped cilantro

  • 1 serrano chili, finely diced

  • 1 tbsp minced ginger

  • 1 tbsp minced garlic

  • 1 tsp salt

  • 1/2 tsp turmeric

  • 1/2 red chili flakes

  • 1/2 tsp red chili powder

  • 1/2 tsp cumin

  • 1/2 tsp coriander

  • puff pastry sheets or uncooked frozen parathas

  • 1 egg, beaten + 1 tbsp of water

  • sesame seeds, for garnish


Instructions:

  1. In a mixing bowl, add ground meat, onion, cilantro, chilies, and spices. Mix together until fully combined, but do not over mix.

  2. Take about 1 tbsp of the meat mixture and form into small kebabs in the shape of logs.

  3. Place the kebabs in the freezer for 10-15 minutes so they firm up a bit.

  4. Cut puff pastry or frozen parathas into 1 inch strips. The length of each strip should be roughly 3 inches so you can wrap them around the kebabs once.

  5. Remove the kebabs from the freezer and wrap the center of each one in the dough.

  6. Place the kebabs on a parchment-lined baking sheet with the seam of the dough facing down. Brush the tops with a beaten egg and sprinkle with sesame seeds or any other seasoning you like.

  7. Bake at 400 degrees for 15-20 minutes until the pastry in light golden brown. You can also broil for the last minute to get the tops darker if you’d like.

  8. Serve with your favorite dipping sauce.
