Spicy Crispy Deviled Eggs
Ingredients:
- 4 hard boiled eggs 
- 1/4 tsp paprika 
- 1/4 tsp salt 
- 1/2 serrano chili, finely diced 
- 2 tbsp mayo 
- 1/2 tsp dijon mustard 
- 1/4 cup flour 
- 1 egg, beaten 
- 1/3 cup panko breadcrumbs 
- chives, for garnish 
- smoked paprika, for garnish 
- vegetable oil, for frying 
Instructions:
- Slice hard boiled eggs length-wise, and gently remove the yolk. 
- Place the egg yolks in a bowl and add, salt, paprika, mayo, serrano chilies, and mustard. Mix to combine well and set aside. 
- Set up a breading station with 1 bowl flour (seasoned with salt and pepper), 1 bowl with the beaten egg, and 1 bowl with panko breadcrumbs. 
- Dredge the eggwhite halves first in the flour, then the egg, then the panko breadcrumbs. Repeat with all of the whitewhite halves. 
- Gently fry the eggwhite halves in oil on medium-high heat for 1-2 minutes until golden brown. 
- Remove from the oil and let drain on a paper towel. 
- Use a spoon or piping bag to add the egg yolk mixture to the center of the eggwhite shells. 
- Garnish with a sprinkle of paprika and some chopped chives.
