Strawberry Pop Tarts
Ingredients:
Pop Tarts
- 1 cup fresh diced strawberries 
- 2 tbsps strawberry jam 
- ½ cup softened cream cheese 
- ¼ cup powdered sugar 
- ½ tsp vanilla extract 
- frozen puff pastry 
Icing
- ½ cup powdered sugar 
- 2 tbsp lemon juice 
- food coloring (optional) 
- sprinkles (optional) 
Instructions:
- Preheat the oven to 400 degrees. 
- In a small bowl, mix together the diced strawberries and strawberry jam and set aside 
- In a separate bowl, mix together the cream cheese, powdered sugar and vanilla. 
- Use a rolling pin to thin out the puff pastry slightly and then slice the puff pastry in a small square. 
- Top each square with some of the cream cheese mixture while leaving a ½ inch border around the edges. 
- Add a spoon of the strawberry mixture on top of each square. 
- Roll out a second sheet of puff pastry, cut into squares, and place on top of each square with the fillings. 
- Transfer the pop tarts to a baking sheet lined with parchment paper. Crimp all around the edges of each square with a fork. 
- Brush the top of the pastries with a beaten egg and place in the oven for 15-20 minutes. 
- While the pop tarts are baking, prepare the icing by mixing together the powdered sugar and lemon juice. If you would like to add color to your icing, add a few drops of food coloring of your choice to the icing. 
- The pop tarts are done once they have doubled in size and golden brown. Transfer them to a baking rack until cooled. 
- Pour the icing over the top and add sprinkles.
